Meat Loaf

IMG_3791-304tg5o6bsvqz5jfhe7d34I was in the mood for meat loaf today. Another great food you can dip in ketchup! When I make a meat loaf, I usually buy enough hamburger to make two.  One for now, and one to freeze for later. I learned two things today about meat loaf. One is, you need to let it set for a few minutes after you take it out of the oven, or it will fall apart on you.  I was trying to get it on the plates quickly tonight, because my husband and son were circling around the kitchen like vultures, repeatedly asking me if it was ready yet. Secondly, I learned it is very difficult to get a good photo of meat loaf. Let’s just be honest here, meat loaf is not the best looking food. But that’s ok because it tastes great! So I’m not too happy with my pictures, but sometimes you just have to let it go. Hope you enjoy the recipe!

  • 1 1/2 Pound Hamburger
  • 3 Tablespoons Finely Chopped Onion (I do mine in a mini chopper so my family doesn’t know it’s there. Shhhh, don’t tell)
  • 2 teaspoons Salt
  • 1/4 teaspoon Pepper
  • 1 teaspoon Dry Mustard
  • 1 Tablespoon Worcestershire Sauce
  • 4 Slices of Bread (chopped fine in mini chopper or food processor)
  • 2 Eggs
  • 1/3 cup Ketchup
  1. In a large bowl mix all 8 ingredients except for the hamburger and mix well.IMG_3770
  2. Then add the hamburger and mix well. I often glove up and use my hands to mix this together, but whatever works for you is fine.IMG_3771
  3. Prepare your pan. You can use a bread pan, but I prefer to use my broiler pan so any fat runs away from my meat loaf. I don’t like a big mess, so I usually cover the top and bottom of my broiler pan with foil. I just punch a few holes in the foil on the top so the fat can drain through. Still a little messy, but not as bad.IMG_3772
  4. Form your hamburger mixture into the shape of a loaf and place on your pan.IMG_3773
  5. Then take some extra ketchup, and cover the entire meat loaf with a nice layer.IMG_3774
  6. Place uncovered in a preheated 300 degree oven for about 2 hours, or 350 degrees for about 1 1/2 hours. Since you have the oven on anyway this would be a good time to throw in some baked potatoes, baked beans, or a fruit crisp. Just saying.
  7. Remove from the oven and let set for about 10 minutes. Then slice and serve. Don’t forget the ketchup!IMG_3784
